Today is DH’s 64th birthday, and I wanted to make something special for dinner. I had a taste for green papaya salad, and so I bought a (I thought) green papaya at the grocery today. OMG Meatballs

These are not to be believed: 1 large jar grape jelly (or 2 cans of jellied cranberry sauce) 2 jars chili sauce 1 large bag meatballs   Place in crockpot on low for 6 hours. Bask in the ensuing praise.

Ice Cream Bread

3 cups of self-rising flour 4 cups of your favorite full-fat ice cream, softened Mix ingredients, smooth into a loaf pan. Bake at 350 for 55-65 minutes: test for doneness with a knife Don’t have self-rising flour? Add 1 1/2 tsp baking powder and 1/2 tsp salt to each cup of all purpose flour, mix thoroughly.

Ham and Cheese Crepes

It is our tradition to have crepes for Christmas morning. This is our traditional Christmas morning breakfast (along with sausage and bacon!). For fillings we use powdered sugar, syrup, jam, canned fruit….a combination of all the above….and DH usually adds in his sausage or bacon! 1 cup flour 1 cup milk 2 eggs, beaten 2 tbsp melted butter Beat the eggs, add the milk and flour and melted butter. Baked in Pumpkin Sausage Stew

Ingredients: 1 pumpkin ~4lbs 2 pkg Mild Italian Sausage Links (I used Johnsonville) 16-18 ounces stout beer (I used Guinness) 1 large red onion, coarsely chopped 1 cup sliced carrots 1 can corn 1 cup chopped celery 2tsp minced garlic 1 green, red, yellow or orange bell pepper, chopped (I used 1 mini pepper of each color) 2-3 medium potatoes, cut into bite-sizzed pieces. 1 cup cooked rice 1 can chicken broth (14.5oz)   Instructions: Continue reading

Baked Salmon with Sausage-onion topping

1lb salmon filet 4 brown and serve sausages, thawed and ground (or equivalent amount of ground sausage of choice) 1/3 cup French’s french fried onions Salt/pepper to taste 1-2 tbsp butter, melted 1/2 cup shredded cheese   Place filet skin side down in a baking dish. Papaya joy

We have learned to love Green Papaya Salad. We have adapted shredded green papaya to make coleslaw. Today at church, the “lunch providers” brought a soup/stew based on chicken broth, chicken and with chopped papaya chunks in it. “Hrmmmmm,” I says to myself. “Kinda squash-like. Ok, so I have learned to love my homemade guacamole.  I have also lost 60lbs….by NOT eating homemade guacamole.  So I found this stuff, with veggies for dipping, is a guilt-free-satisfier-of-my-snacking-need treat. Malay Apple (Mountain Apple) Pickles

Malay Apples are called Mountain Apples here in Hawaii, and it is thought the first Polynesian explorers brought seedlings with them when they inhabited these islands. They are apple shaped with deep red or pink skins. The white flesh is similar to a pear. And they are in season now. “What should we do with all these?” asked DH. “PICKLES!” I said.
