Crepes

This is our traditional Christmas morning breakfast (along with sausage and bacon!). For fillings we use powdered sugar, syrup, jam, canned fruit….a combination of all the above….and DH usually adds in his sausage or bacon!

1 cup flour

1 cup milk

2 eggs, beaten

2 tbsp melted butter

Beat the eggs, add the milk and flour and melted butter. Refrigerate for at least an hour prior to cooking.

Grease a frying pan and heat over medium heat. Pour 1/4 cup of batter (you may need to add enough milk to make it flow easily) into the pan, turning it constantly to spread the batter in a thin layer over the bottom. Fry until golden brown, then turn and cook the other side until nicely “spotted.”

To serve: put crepe on plate, butter, then add your filling . Catch one edge of the crepe with a fork, then roll into a tube. Cut….enjoy.
